The terms ecological agriculture or organic agriculture define the production of foods and other agricultural produce based on using as environmentally friendly as possible production methods whilst taking ecological and environmental protection issues into account. Ecological agriculture foregoes the use of chemical-synthetic pesticides (fungicides, herbicides, and insecticides), synthetic growth enhancers, synthetic fertilisers and gene as is used in conventional agriculture.

Since 2007 our cheese dairy and our farm are „certified-organic“ enterprises certified by the Biokontrollstelle Tirol (Tyrolean Board of Control for Organic Agronomy). Due to the growing popular demand for healthy, environmentally friendly produced foods we have decided to offer are organic cheese products on this market. Especially since Heumilchkäse already largely fulfills the organic cheese requirements it was only a question of making small amends to our logistics and the production process.
